Ingredients:
1 T. grated fresh lemon zest, about 1 lemon
2 T. fresh lemon juice, about 1 lemon
1/4 C. olive oil
1 T. honey
1/2 tsp. salt
1/2 tsp. black pepper
3 C. frozen or fresh corn
1 C. uncooked quinoa
Chicken or vegetable stock, you will replace the water in your package directions for the quinoa
1/4 cup butter, melted
4 green onions, chopped
1/2 C. parmesan, feta or goat cheese (whichever one you like the most)
What to do:
Prepare the dressing by mixing together the lemon zest, lemon juice, olive oil, honey, salt and pepper in a small bowl and mix together, set this aside.
Rinse the uncooked quinoa in a sieve under cold water until the water runs clear. Cook the quinoa per the package directions but instead of using water replace with chicken or vegetable stock and add the melted butter. Once the quinoa is cooked add the corn, chopped green onions and parmesan cheese to a large mixing bowl, and then add your dressing and toss until it’s evenly coated. Salt and pepper to taste and garnish with extra green onions.
