Ingredients:
1 lb. cooked and crumbled ground beef, turkey or chicken
2-3 cups cooked rice
1 can (about 10 oz. or so) diced tomatoes with green chilies, drained to make your own click this link
6 large flour tortillas
2 cans enchilada sauce, to make your click on this link www.
Cheesy Bean Dip
1 C. sour cream
1 – 16 oz. or so, can refried beans
1 block of cream cheese, room temperature
2 pkg. taco seasoning or make your own click on this link
1 C. Mexican or cheddar cheese
Salsa, sour cream, extra cheese (optional)
What to do:
For the cheesy bean dip:
In a microwave safe bowl combine all the ingredients. Cook for 3 minutes; stir and cook for another 3 minutes, until everything is melted together, set aside. If your tortillas are a little dry place them in the microwave for a few seconds until pliable. Fill first with crumbled ground meat, rice, then tomatoes, bean dip and then anything that strikes your fancy. Fold and place in microwave for 30 seconds. Drown with lots of enchilada sauce and top with salsa, sour cream and extra cheese.
