Instructions:
2 T. olive oil
1 medium onion, diced
1 red pepper, diced
5-6 cloves garlic, minced
2 cans diced tomatoes (14 oz) or diced tomatoes with chilies
2 lbs raw shrimp, peeled & deveined
2 cans coconut milk (14 oz or 2.5 cups)
1 tsp. curry powder
1/4 C. fresh cilantro or parsley or 1/8 C. dried, chopped
2 T. Sriracha or chili paste
Salt and pepper to taste

Lime wedges
What to do:
In a large pot over medium heat add oil; once oil is hot, sauté onions and peppers until onions are translucent, about 2-3 minutes. Add in your garlic, tomatoes, and shrimp, simmer until shrimp turns opaque, about 3-4 minutes. Pour in the coconut milk, curry powder, cilantro and hot sauce and simmer for another 5-7 minutes to allow flavors to combine and heat through. Garnish with lime wedge and any of your favorite toppings.
