Serves: 6-8
Ingredients:
1 T. cooking oil
1 large onion, diced
1 to 2 lb. lean ground turkey, beef or chicken, depending on preference
1 (28 oz.) diced tomatoes or crushed tomatoes (I have used both)
1 C. chopped cooked bacon
1/3 cup yellow mustard
Salt and pepper to taste
1 tsp. chopped garlic
1 tsp. paprika
1 tsp. chili powder
1 tsp. dry mustard
1 box of macaroni or 4 C. egg noodles
2 C. grated cheddar cheese
1 C. mozzarella cheese
What to do:
Preheat oven to 400 degrees
In a medium Dutch oven or stock pot sauté the onions, when translucent add the beef and cook, breaking it up into small to medium pieces. Add the tomatoes, bacon and the rest of the seasonings, bring to a simmer, then reduce the heat to low and cook for 5 minutes.
Cook your pasta according to the directions on the back. Drain it and add it to the tomato, meat mixture with one cup of the cheddar cheese, stir together. Transfer it to a large baking dish and cover it with foil. Bake it in a 400 degree oven till its piping hot (about 30- 45 minutes or until done). Just before serving, remove the foil, cover macaroni with the rest of the cheeses and broil till it looks glorious. Garnish with tomatoes, extra bacon, green onions etc.
