Ingredients:
Salad:
1 medium apple, unpeeled, chopped
2 C. diced cooked chicken (about 1 large breast)
1 C. red seedless grapes, halved
1 stalk celery, finely chopped
1/4 C. golden raisins
1/2 C. toasted walnuts, coarsely chopped
Dressing:
1/2 C. yogurt (preferably Greek non-fat)
1/2 C. mayonnaise
Juice of 1/2 orange or orange juice (about 1/4 cup)
1/4 tsp. salt
What to do:
In a small bowl, combine the yogurt, mayonnaise, orange juice and salt, set aside.
In a medium sized bowl mix in the apple, chicken, celery, grapes, raisins and walnuts. Combine the dressing and serve on a bed of fresh lettuce or in a pita pocket.
