Serves 4
Ingredients:
3 C. cooked rice
1 lb. cooked hamburger with taco seasoning, crumbled
1 C. salsa
1 can black beans, rinsed and drained
1 can diced tomatoes with or with chilies, drained
1 medium red onion, chopped
1 1/2 C. corn (frozen or canned)
1 avocado, chopped
1 C. shredded cheddar cheese
Romaine lettuce, chopped
Creamy chipotle Sauce:
1/2 C. plain Greek yogurt
1/2 C. mayonnaise
1 chipotle Chile in adobo sauce plus 1 tsp. sauce (canned)
1-2 cloves garlic
1 T. fresh lime juice
1/8 tsp. cumin
Salt, to taste
What to do:
In a medium size bowl combine your rice and canned tomatoes with chilies. Begin layering your bowl: start with rice, then cooked hamburger, black beans, all you’re your vegetables, salsa and cheese.
Drizzle the creamy chipotle sauce on top and enjoy.
Creamy Chipotle Sauce:
Place all ingredients in a blender or food processor and puree until smooth about 2-3 minutes or until the mixture is nice and creamy. Pour into a jar or small bowl and refrigerate for up to 4 weeks.
