Serves: 15-35 depending on the size of tortillas you are using
Ingredients:
4 C. cooked shredded chicken (This is where those rotisserie chickens come in handy)
8 oz. cream cheese, softened
1/2 C. sour cream
1/4 C. red hot sauce
1 1/2 C. shredded sharp cheddar cheese
1 tsp. garlic powder
1/2 chopped red onion
Salt and pepper
10-15 (10-inch) flour tortillas

What to do:
Preheat the oven to 350*.
In a large bowl mix together the chicken, cream cheese, sour cream, red hot sauce, cheddar cheese, garlic powder and onion. Season to taste with salt and pepper.
Place 2-3 tablespoons of the mixture down the center of each tortilla and roll up, place on a baking sheet prepared with cooking spray. If needed, microwave the tortillas for about 30 seconds to make them soft and pliable enough to roll. Spray the taquitos also with the cooking spray so they will get nice and crisp, and then sprinkle with coarse salt. Bake for 15-20 minutes, or until golden brown. Serve with sour cream, guacamole, salsa, ranch dressing, etc…….YUM!!!!!
