Serves: 4-6
Ingredients:
1 head cauliflower (chopped into bite size pieces)
1/2 C. mayonnaise or Greek yogurt
1/4 C. red onion, chopped
1/2 C. sour cream
1/4 C. sugar or honey
1/4 tsp. salt
1/2 C. shredded cheddar cheese
1 C. peas
3 hard boiled eggs, chopped
2 celery stalks, chopped
1/2 lb. bacon (fried, crumbled)
What to do:
Boil the cauliflower until fork tender, not too long or it will turn to mush. Set aside and let cool completely. Combine the mayonnaise, red onion, sour cream, sugar, and salt, set aside.
Combine the cauliflower, shredded cheddar cheese, peas, chopped eggs, celery and bacon in a large bowl.
Add the dressing to the cauliflower mix, stirring to evenly coat the vegetables. Refrigerate for the best flavor, minimum one hour.

This is a great salad for those extra items you want to add. Just some ideas, broccoli, cranberries, raisins, nuts, carrots ….just to name a few, have fun!!!!
