Serves: 3-4
Ingredients:
6 slices bacon, chopped into one inch pieces
1/2 lb. dried whole grain rotini pasta
1/2 stalk of a roman lettuce, chopped
1/2 C. mayonnaise
Juice of 1 lemon
1/4 tsp. salt
1/2 tsp. garlic powder
1/4 tsp white pepper
1 tsp dried dill
1 C. halved cherry tomatoes
1 avocado pitted and sliced
1 fresh jalapeno (optional)
1/4 C. fresh chopped parsley
What to do:
Cook bacon until your liking. Transfer to a paper towel lined plate to capture some of the bacon grease. Cook pasta according to package directions. Strain and run cold water over the pasta until cooled.
While your bacon and pasta is cooking, whisk mayonnaise, lemon, salt, garlic powder, pepper and dill together in a bowl.
Stir cooled pasta, lettuce, cherry tomatoes, sliced avocado, chopped jalapenos and reserved bacon into the dressing. Toss to combine. Refrigerate for 30 minutes.
Top with fresh chopped parsley and serve.

I have also added olives, croutons, diced dill pickles and cubed cheddar cheese in this salad and let me say…..YUMMIE! Let the imagination go wild on this one.
