I’m pleased to say if you are looking for a little zippy zap to your stroganoff this one will never disappoint! This is a super easy one dish meal that the whole family will love. A delicious combination of seasoned ground beef, cream cheese and cheddar cheese makes it super creamy and full of flavor. It’s like putting nacho dip over your noodles, YES please!!!

Cook Time: 20 minutes
Serves: 4-6
Ingredients:
1 small onion, chopped
1 lb. ground chicken, beef or turkey
1 envelope taco seasoning mix
1 tsp. garlic powder
1/2 C. water
1 (about 14 oz.) canned corn with diced peppers, (Mexican Corn) drained
1 (8 oz.) pkg. cream cheese
1 C. shredded cheddar cheese (taco blend also works well with this dish)
8 oz. egg noodles, cooked and drained
What to do:
In a medium size cooking pot, add onions and ground meat, cook until ground meat is no longer pink, drain fat. Add taco seasoning, garlic powder, water, and corn to beef mixture, cook 1-2 minutes. Add cream cheese and cheddar cheese; cook until it is heated through and cheese has melted, toss with noodles.
Christina’s Notes:
Garnishes for this dish….avocado, olives, jalapeños, chopped tomatoes, sour cream, and etc. Try to crush some corn chips or cheese corn chips on top of this dish; it will add that crunch and flavor that you’re looking for!! You can also use 4 oz. cream cheese and 4 oz. sour cream instead of the 8 oz. Cream cheese.
