Serves: 4-6
Ingredients:
1 pkg. of artisan lettuce, see notes below
2 Gala or Honey crisp apples, thinly sliced
1 lb. bacon, cooked and crumbled
3/4 C. walnuts, toasted and chopped
1/2 C. crumbled goat cheese or blue cheese
Dressing:
(If you don’t like honey mustard vinaigrette then use whatever dressing catches your fancy)
1/3 c. white wine vinegar
1/4 C. extra-virgin olive oil
2 T. Dijon mustard
1 T. honey or 2 tsp. sugar (more to taste)
Salt and pepper to taste
(You can easily double this recipe)
What to do:
Combine all the dressing ingredients in a jar or bowl. Wisk or shake until well blended.
Arrange the salad on a platter and drizzle the vinaigrette, using as little or as much, depending on your taste. I like to have some left over to place on the table for those who would like more. Top with your sliced apples, crumbled bacon, toasted walnuts and crumbled cheese. Enjoy!!!

You can find the artisan lettuce at any grocery store. The package includes lettuce varieties, all offered in red or green. Allowing you to mix n’ match the lettuces and colors to create your own salad masterpiece! If you’re not into honey mustard vinaigrette, use whatever dressing catches you fancy.
