Ingredients:
6 ears of cooked corn
1 jar mayonnaise
1/2 cup butter, melted
1 1/2 C. crumbled cotija, feta or grated Parmesan
Chili powder
Salt and pepper to taste
2 limes cut into wedges
1 bunch cilantro, chopped
For more spice use ground cayenne instead of chili powder, more or less to taste
What to do:
With your corn still warm, spread an even amount of mayo onto each cob, and then drizzle on the melted butter. Roll the slathered corn in the cheese, then sprinkle with the Chile powder, salt and pepper. Repeat the process with the remaining corn. Squeeze a lime wedge onto each cob and sprinkle with the chopped cilantro, if desired, than dig in.
