Ingredients:
Salad
4 C. of Spinach
1 pint of grape tomatoes, quartered
1 C. sweet corn, fresh or frozen (defrosted)
1 C. fresh or frozen peas (defrosted)
4 stalks of green onion, 3 stalks for the dish, 1 for garnish, give and take
1 avocado, chopped
4 to 8 oz. of feta, crumbled
Dressing
3 T. olive oil
2 limes, juiced
1/4 tsp. salt, to taste
1/4 tsp. pepper, to taste
1/4 C. fresh chopped parsley or 1 T. dried
What to do:
In a large bowl, combine spinach, tomatoes, corn, peas, part of the green onions and avocado. In a jar or bowl add in salt, pepper, Olive oil, lime juice and parsley…..shake, shake, shake or whip, whip, whip, whichever strikes your fancy. Pour half of the dressing and half of the feta into the salad bowl and fold. Add in rest of the feta and top with the left over green onions. You can also add more dressing or put it to the side so people can add as they wish.
Christina’s Notes:
This dish is also great with roasted chicken, pork, steak or any kind of meat you are craving. Blue cheese is also a great alternative if you don’t have feta, especially with the steak. Don’t want all of the spinach or you just plain don’t like it, throw in different kinds of lettuce, butter lettuce and fresh arugula is a few of my favorites, be creative.
