Serves: 2-4
Ingredients:
2 cups cooked, diced chicken, tossed in BBQ
3 cups mixed salad greens
6 strips bacon, cooked and crumbled
3 hard-boiled eggs, peeled and crumbled
2 Roma tomatoes seeded and chopped
1 ripe avocado, cubed
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can yellow corn, drained
1 cup grated cheddar and/or Colby jack cheese
1 poblano pepper, seeded and chopped
1 small red onion, chopped
Mexican Fiesta Dressing
Ingredients:
1/2 C. jarred salsa (spicy is best!)
1/2 C. sour cream or Greek yogurt
1/4 C. mayonnaise
1 clove garlic, minced or pressed or 1/8 tsp. garlic powder
1/2 tsp. cumin
1/8 tsp. onion powder
1/8 cayenne pepper or pepper flakes (optional)
Salt And pepper, to taste
What to do:
Pile the lettuce into a shallow serving bowl or several smaller bowls. Arrange the chicken, bacon, eggs, tomatoes, avocado, beans, corn, cheese, poblano peppers, and red onion in thin rows over the lettuce. For the dressing, combine all the ingredients in a bowl and stir until mixed well, refrigerate for at least one hour to let all those wonderful flavors blend!!!

Chicken mixture can be heated in a microwave if you want it warm. Keep in mind you can use any combination of meats or vegetables that fit you or your family’s needs. This is one of my go-to dressings; it’s great on macaroni salad, used as a salad dressing and also a fantastic vegetable dip!
