Ingredients:
Cake:
(By all means, you can use a box cake. If not follow the instructions below for homemade yellow cake)
2 1/4 C. all-purpose flour
1 1/2 C. granulated sugar
1/8 C. vegetable oil
3 1/2 tsp. baking powder
1 tsp. salt
1 1/4 C. milk
1 stick butter, softened
1 T. vanilla extract
3 large eggs
1 small box Jell-O, berry flavor
1 C. blueberries
1 C. blackberries
1 C. sliced strawberries
Any kind of fruit your family will eat
Topping:
8 oz. whipped topping, thawed
1/4 C. powdered sugar
1/4 tsp. vanilla extract
What to do:
Preheat oven to 350 degrees
Prepare a 9×13 baking pan with non-stick cooking spray.
In a medium size bowl combine flour, sugar, baking powder and salt, set aside. Place softened butter into a larger bowl and mix for 1-2 minutes. Place dry ingredients in the larger bowl and combine with butter for 30 seconds. Add milk, oil, vanilla and eggs and mix on medium-high for one minute. Pour batter into your 9×13 pan. Bake for about 30 minutes or until a toothpick inserted in the middle of the cake comes out clean. Cool for at least 20 to 30 minutes.
Prepare Jell-O by following the package instructions, then set aside.
Using the end of a wooden spoon, poke 25-30 holes evenly into the cooled cake. Twist the end of the spoon to make a clean hole, but being sure not to poke all the way through the bottom of the cake. Evenly pour the jello over the top of the cake, making sure to get into each and every hole. Cover with plastic wrap and refrigerate until the gelatin has set, at least 3 hours.
Once the cake has set up, combine whipped topping, powdered sugar and vanilla extract in a medium bowl and stir to combine. Spread evenly over the top of cake. Arrange mixed berries over the top of the whipped cream. Enjoy!!!!!
