Serves: about 3 cups
Ingredients:
1 C. shredded extra-sharp Cheddar cheese
1 C. shredded pepper jack cheese
1 pkg. (8 oz.) cream cheese softened
1/2 C. mayonnaise
1/2 tsp. garlic powder
1/4 tsp paprika
1/4 tsp. or more, ground cayenne pepper (optional)
1/2 tsp. onion powder
1 (4 oz.) jar diced pimento, drained
Salt and black pepper to taste
Garnish with chopped green onion
What to do:
With an electric mixer, mix everything but the cheese and pimentos, mix for 1-2 minutes. Fold in the cheese and pimentos, salt and pepper to taste. Garnish with green onion and refrigerate for at least 10-15 minutes before serving just so the flavors blend.
