Serves: 4-6
Ingredients:
1 to 2 C. cooked chopped chicken
1 (12 oz.) bag frozen chopped broccoli, thawed or frozen will work
1 C. shredded sharp cheddar cheese, divided, add more if you desire
3 C. cooked rice
1/4 C. butter, diced
1 C. milk
1 (10 3/4 oz.) can cream of mushroom soup
1 (10 3/4 oz.) can cream of chicken soup
1 tsp. garlic powder
1 tsp. onion powder
Salt and Pepper to taste
What to do:
Preheat oven to 350.
In a large bowl combine cooked chicken, rice, broccoli, 1/2 C. cheese, milk, soups, onion powder, garlic powder, salt, and pepper. Stir well to combine. Spray a 9×13 dish with cooking spray. Pour chicken and rice mixture into dish and spread evenly. Top with diced butter. Bake for 30-45 minutes until heated through add cheese on top and cook another 15 minutes. You can also put this under the broiler for a few to speed things up.
Christina’s Notes:
For extra flavor add more cheddar cheese into the mixture as well as on top. Also, 1/2 C. fried onions mixed into the mixture and add a 1/2 C. on top when it’s almost done, it knocks this recipe out of this world. If you just have 2 cans of mushroom soup that will do just fine. If you don’t have frozen broccoli add other vegetables, all is good when it comes to this recipe. Have fun!!!!
