Ingredients:
1 lb. gnocchi
1 lb. bacon, chopped
2 garlic cloves, crushed
1 1/2 tsp. paprika
2 T. tomato paste
1 lb. (more or less) cherry tomatoes chopped
1 C. fresh mushrooms (whatever ones you desire the most) chopped
1/2 C. calamari olives, chopped in half
1 tsp. sugar
1/4-1/2 C. heavy cream or Greek yogurt
Handful of parsley, chopped
1 C. mozzarella or Monterrey jack cheese or any cheese that you fancy (optional)
What to do:
In a large oven safe skillet pour the gnocchi into salted boiling water. When the gnocchi rises to the top of the water, let them cook for 2 minutes. Drain and set aside.
In the same skillet fry the bacon until crisp, pour off most of the fat then add the garlic, mushrooms, and paprika and sauté for 3-4 minutes. Add all of the tomatoes, tomato paste, olives and the sugar and allow simmering for 6-7 minutes. Remove the pan from the stove and stir in the cream or yogurt, parsley and salt and pepper to taste. Add the gnocchi to the tomato sauce and stir, top with the cheese. Put under the broil for 1-2 minutes to get the cheese melted and golden brown. Remove from oven and let stand for about 5 minutes…….Serve with your favorite wine and artisan bread then…Enjoy
