Pie Crust:
1, 1/2 C. flour
1 tsp. salt
1 stick and 2 T. of butter keep in freezer or refrigerator
1 egg, beaten well
5 T. cold water
2 tsp. distilled white vinegar
What to do:
Preheat oven to 400 degrees.
You don’t have to use a skillet for this, I just like the presentation.
In a large bowl add your pie filling and stir well making sure every piece is coated with the sugar mixture.
In a medium size bowl combine all your topping ingredients, set aside.
In a large bowl mix together the flour and salt, take a grater and grate your butter making sure to stir so all pieces get coated with the flour mixture; this helps the butter from sticking together. In a small bowl mix your egg, water, and vinegar add this to the flour mixture and mix making sure that all the flour is combined, you may need to add more water if necessary, the dough will be crumbly. Dump this onto the bottom of your skillet and press down. Now, layer your pie filling than your topping making sure that this is evenly spread on top. Dot with more butter if you wish, bake for 35-45 or until done, you can lightly cover the top with tin foil if it starts to get to brown. Serve warm with ice cream or a wedge of your favorite piece of sharp cheddar cheese.
