Prep Time: 10 minutes
Cook Time: 15 minutes
Serves: 4
Ingredients:
4 ciabatta buns
Butter for buns and onions
Olive oil
Garlic powder
1 large onion sliced, I used two because I love grilled onions
4 Large Portobello Mushroom Caps
Your favorite marinade, to use mine click on the link http://cooknwithmrsg.com/2016/06/16/meat-tenderizer/
Mayo
Swiss cheese
What to do:
Begin by mixing together the marinade ingredients into a small bowl.
Place the mushroom caps cap side down in a large enough dish to hold the mushrooms and pour the marinade over the top. Let the mushrooms soak in the marinade for about 30 minutes, occasionally turning them to make sure you get both sides.
While the mushrooms are marinating, butter and sprinkle garlic powder on your buns. Toast them until they are golden brown and crunchy.
In a medium size fry pan over medium heat melt equal amounts of butter and olive oil together then add the onions; let them cook slowly until the onions are getting a little brown and nice and soft, about 10-15 minutes.
Next grill or pan fry mushrooms for 5-7 minutes per side beginning with cap side down. Continue to brush the mushrooms with the marinade while they are cooking. Start with your bottom bun then add some mayo, mushroom, grilled onions, two slices of cheese then put under the broiler long enough to melt the cheese leave as is for an open face sandwich or put mayo on the top bun, slap together and you have one awesome mushroom burger! Yummmm
