Ingredients:
1 large cauliflower head, cut into bite size pieces
3 T. butter
4 T. flour or corn starch
2 C. milk
4 oz. shredded sharp cheddar cheese
4 oz. shredded Monterey Jack cheese
4 oz. block cream cheese
1 tsp. garlic powder
1 T. mustard
1 bunch of green onions, sliced about 1/3 C
4 slices cooked and crumbled bacon
Salt and pepper to taste
Red pepper flakes, extra bacon and cheese for garnish
What to do:
Spray a 9×9 or 8×8 baking dish with cooking spray.
Preheat oven to 375 degrees.
In a large pot boil cauliflower florets until tender but still firm, drain and set aside. In that same pot over low heat, add the butter and flour stir the mixture for about two minutes. Then, add the milk and stir everything until it starts to boil and thicken (you may have to turn the heat up). Take off heat and mix in the shredded cheddar, Monterey Jack, cream cheese, garlic powder and mustard. Stir in sliced green onions, chopped bacon and cauliflower, mix well to combine and pour into the prepared baking dish.
Cover dish, bake for 35 minutes; remove cover; add additional cheese (optional) and continue to bake until cheese is brown and bubbly or put under the broiler for a few minutes to brown. Garnish with extra green onion and bacon.
