Cabbage is one of those vegetables that is cheap and serves a crowd. It can be stretched and stretched and stretched. This casserole is everything, quick, easy, flavorful and cheesy. Also it’s a one-pot meal. Enjoy!

Serves: 6-8
Ingredients:
1 lb. ground beef
1 lb. ground sausage
1 small onion, chopped
1 green pepper, chopped
1 small head cabbage, chopped
1 (14 ½ oz.) can diced tomatoes or diced tomatoes with green chills, do not drain
1 (8 oz.) can tomato sauce
1 T. oregano
1 1/2 tsp. garlic powder
1 T. Italian seasoning
1/4 tsp. red pepper flakes (optional)
1 C. white rice or any variety, uncooked
2 C. broth it can be chicken, beef or vegetable
2 C. shredded cheddar cheese
Salt and pepper to taste
What to do:
Preheat oven to 400 degrees.
Brown ground beef, sausage, onion, and green pepper in a large stock pot over medium-high heat, drain fat if any. Turn heat down to medium and drop in cabbage, diced tomatoes, tomato sauce, oregano, garlic powder, Italian seasoning, red pepper flakes, rice, broth; cover and cook for 10 minutes. Transfer mixture to a 9×13 casserole dish and cook for 30-40 minutes or until rice is done. Take out and sprinkle with cheese and put under the broiler until the cheese is melted and golden brown.
