Ingredients:
1 tsp. ground ginger
1 tsp. garlic powder
1/3 C. soy sauce
1/3 C. orange juice
1/4 C. honey
1 green onion, chopped
2 lb. fish fillets, I use cod and salmon
2 T. olive oil
What to do:
In a large self-closing plastic bag or mixing bowl, combine ginger, garlic, soy sauce, orange juice, honey and green onion: mix well. Place salmon in the bag or mixing bowl, seal or cover tightly. Turn bag or turn fish in mixing bowl to distribute marinade. Refrigerate for 30 minutes.
Preheat outdoor grill or large fry pan on medium heat and lightly oil grate or pan with olive oil.
Remove fish from marinade, shake off excess, and discard remaining marinade or reduce liquid to a thick consistency. Grill or fry for 12 to 15 minutes or until done. (The fish flakes easily with a fork).
Serve with pieces of chopped green onion and some of the thickened sauce.
