There are days when it comes to dinnertime; I want it fast, delicious and easy. This is the creamiest and cheesiest soup that is loaded with ground beef, potatoes, carrots and a bunch of yumminess. This soup is a family favorite!
Cheeseburger Chowder
Prep Time: 10 minutes
Cook Time: about 30 minutes
Serves: 6-8
Ingredients:
1 lb. ground beef cooked and crumbled with fat drained
1 Can (about 15 oz.) petite diced tomatoes (with or without chilies) drained
1 C. onion, chopped
1/4 C. celery, chopped
1/2 C. carrots, chopped
2 cloves garlic, minced
6 C. potatoes, cubed (fresh or frozen if frozen a 32 oz. bag will do the trick)
1 tsp. Worcestershire
1/4 C. ketchup
1/8 C. mustard
1 tsp. salt
1 tsp. black pepper
4 C. beef broth
1 C. heavy cream
1/2 C. flour
2 C. processes cheese or shredded cheddar cheese
What to do:
In a large stock pot add cooked beef, tomatoes, onion, celery, carrots, garlic, potatoes, Worcestershire, ketchup, mustard, salt pepper and beef broth, cook on medium heat for 10-15 minutes or until vegetables are tender. In a small bowl combine cream and flour, mix until smooth. Pour into soup, stirring to combine, continue to cook until thick, take off the stove and add in cheese continue to stir until all cheese is melted. Garnish with bacon, pickle slices, and additional cheese if desired.
