Peanut brittle is a great recipe to have on hand because it’s comforting, delicious and everyone will be very impressed that you made it from scratch. Try using honey roasted peanuts, dried fruit or mixed nuts for a great variety. I sometimes will throw in a 1/8 teaspoon cayenne to spice things up. Store in an airtight container for up to 10 days. Makes a great last minute’s homemade gift!!
Ingredients
Cooking spray
1 C. white sugar
1/2 C. light corn syrup
1 1/2 C. peanuts, or more to taste
1 T. butter
1 tsp. baking soda
1 T. vanilla extract
What to do:
Spray a baking sheet and a mixing spoon with cooking spray. Mix sugar and corn syrup together in a medium-size microwaveable safe bowl for high temperatures. Heat sugar mixture in microwave on high for 5 minutes.
Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes. Then mix baking soda and vanilla extract into mixture stir until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the treated spoon. Try to pull it as thinly as possible. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.
