Ingredients:
1 lb. bacon cut into bite size pieces
1 lb. Brussel sprouts ends cut or cabbage (shredded in the bag or you cut yourself)
1-2 garlic cloves, minced
Olive oil
Salt and pepper to taste
1/2 C. dried cranberries
1/2 C. pecans
1/2 C. parmesan cheese, shredded
What to do:
Place bacon in a large high-sided pan over medium heat. Cook until the bacon is crisp, about 10-15 minutes, stirring occasionally, once done set aside. Add brussel sprouts and garlic to the bacon grease (drain grease if you have too much). Salt and pepper brussel sprouts and lightly drizzle with olive oil if needed, cook brussel sprouts until tender and caramelized. Lower the heat if the brussel sprouts look like they are burning. Add bacon back in along with the cranberries and pecans and cook just long enough to warm things up. Toss with 1/2 of the parmesan cheese, transfer to a party bowl and garnish with the rest of the cheese.
