Ingredients:
1 lbs. ground turkey or chicken or beef
1 medium onion chopped
1 (15-oz) cans diced tomatoes with green chilies, juice and all
2 C. low-sodium chicken, vegetable or beef broth
1 (8-oz) can tomato sauce
1½ T chili powder
1 tsp. garlic powder
2 tsp. ground cumin
1 tsp. ground paprika
1/2 tsp. dried oregano
Salt and pepper to taste
1 (15-oz) can whole kernel corn, drained
1 (15-oz) can black beans, drained and rinsed
1 (15-oz) can pinto beans, drained and rinsed
Toppings
Shredded cheese, chopped green onions, cilantro, diced avocados, jalapeños, chopped tomatoes, sour cream and tortilla strips/chips
What to do:
Cook ground meat in a large pot along with onions stirring occasionally until browned.
Add in the rest of the ingredients and cook for 20-30 minutes. Serve warm topped with desired toppings and a slice of crusty artisan bread.
Christina’s Notes:
Instead of using the chili powder, garlic powder, ground cumin, ground paprika, dried oregano you can use 2 packets of your favorite taco seasoning. Also feel free to use any type of beans you and your family like. To stretch this dish I sometimes put in a total of 3 cans of beans (mix and match your beans if you wish). You can cook in a crock-pot if you wish, add ingredients and cook on HIGH for 2 hours, or LOW for 4 hours. Add more or less of the stock if you want it more or less thick.
