Prep Time: 10 minutes
Cook Time: about 2 hours
Serves: 4-6
Ingredients:
2 lbs of thin cut bacon
2 large sweet potato sliced thin
1 medium onion sliced thin
Salt and pepper to taste
1 1/2 C. Shredded cheese your choice of cheese, I used cheddar and Monetary Jack
Green onions, chopped
What to do:
Preheat oven to 350-degrees
Lay bacon (making sure to overlap) out in a 10-inch skillet and then layer with the rest of the ingredients making sure to salt and pepper (to taste) each layer. Now close by overlapping the ends of the bacon. Bake in a 350-degree oven for about 2 hours. I did drain the fat twice, I’m sure this will depend on how fatty the bacon is. The sweetness of the sweet potato and the saltiness of the bacon works so well together!
Christina’s Notes: And for those of you who are wondering the bacon does cook on the bottom but I’m pretty sure that’s because of the cast iron pan.
