Serves: about 4, Makes about 2 cups
Ingredients:
1 can (15 oz. or so) diced tomatoes (see notes)
1 can (15 oz. or so) diced tomatoes with green chilies (see notes)
1/4 C. medium white, yellow or red onion chopped
2 fresh jalapenos, insides removed and chopped or 3 to 4 T. canned jalapeno
(if you want more or less spice, adjust a number of jalapenos to your liking)
3 gloves of garlic, chopped
Juice of one fresh lime
1/4 Tsp. salt
2 T. fresh chopped cilantro or parsley
What to do:
Add all the ingredients to a bowl and mix well. You can enjoy this right away or place it in the refrigerator to let the flavors dance with each other.
Christina’s Notes:
To mix up the flavor profile mix and match your canned tomatoes. Try and use Italian garlic and basil, fire roasted, or plain diced tomatoes…etc.
If the tomato chunks are too big you can use a food processor, blender or drain the liquid out of the can into the mixing bowl and dump the remaining diced tomatoes on a cutting board and chop away until you get the consistency that’s perfect for you.
Here are some other add in’s to mix the flavor up; green chilies, red pepper flakes, chili powder, cumin…etc.
