Barbecue Pasta and Ground Beef Skillet Dinner
(Ready in fewer than 30 minutes using one pan!)
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 4-6
Ingredients:
1 lb. ground beef
1 Medium pepper (yellow, orange, red or green your choice)
1/2 C. or 1 medium onion, chopped
1/2 tsp. minced garlic
5 oz. or 1 ½ C. of small pasta (bow-tie, shell, etc.)
2 C. beef broth (more if you’re pasta soaks it up)
1 C. salsa (whichever kind you enjoy)
1/2 C. barbecue sauce
1 C. corn
Salt and pepper to taste
1 1/2 C. sharp cheddar
Chopped parsley, green onion, jalapenos for garnish
What to do:
In a large skillet cook beef, pepper, onion, and garlic until beef is cooked through and vegetables are tender about 5 to 7 minutes. Drain your hamburger if needed. Stir in pasta, salsa, broth, barbecue sauce, corn, salt and pepper to taste. Heat to boiling then reduce heat to medium, medium-low. Cover and cook for about 15 minutes stirring occasionally, until pasta is tender. You might have to add more water or broth if the pasta soaks it up. Once pasta is tender stir in 1 C. of cheese until well combined then add the rest on top. Cover and let sit 3-4 minutes until top cheese is melted, and then garnish.
