Prep time: 15 minutes
Cook time: 20 -25 minutes
Serves: 6-8
Ingredients:
6-8 eggs
6 slices of bacon, cooked and chopped or you can use ham or sausage about 4 oz. or so.
1 green onion, chopped (green and white parts)
Salt and pepper to taste
1/4 C. milk or heavy cream
You can use mine or your homemade biscuit dough recipe or 2 (8 ounce) packages of refrigerated crescent rolls or biscuit dough.
For the biscuit dough:
2 C. Flour
3 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
3 T. butter, chilled
3 T. shorting
1 C. buttermilk, chilled
Butter topping:
3 T. melted butter
1/4 tsp. garlic powder
1/2 tsp. onion powder
1/2 tsp. Parsley, dried or fresh
What to do:
Preheat oven to 450 degrees.
Lightly grease a cookie sheet or you can use parchment paper.
Beat eggs, green onions, milk and salt and pepper in a medium size bowl. Heat a lightly oiled skillet over medium high heat and cook egg mixture until eggs are almost set. Put this aside.
In a large mixing bowl, combine flour, baking powder, baking soda and salt. Cut in butter and shorting using a fork, two butter knives, your fingertips or pastry cutter until small chunks of butter and shorting are incorporated throughout. (The faster the better, you don’t want the butter and shorting to melt.) Drizzle milk while mixing, stir just until the dough comes together. The dough will be very sticky.
Turn dough onto floured surface, dust top with flour and gently press in a square then fold dough over on itself 4 or 5 times, don’t knead the dough. On a greased or parchment lined cookie sheet press dough into a 8×12 rectangle. Arrange the scrambled eggs down the center of the dough. Sprinkle with the bacon and shredded cheese.
Cut diagonal strips to within 1/4 inch of the filling on both sides. Fold the strips over each other to form a ‘braid’ shape.
Bake in preheated oven for 20 to 25 minutes, until cheese is melted and the top is golden brown. In my oven I have to use tin foil so my top doesn’t get to brown. Once done brush with butter topping and serve warm.
