This is a favorite cold weather cookie of mine, I absolutely have no self control with these bad boys! Warm, soft and chewy on the inside. Crinkly crunch on the outside. These aren’t your normal sugar cookies, with soft hints of maple flavor they’re sure to be your favorite too!!!
Prep Time: 10 minutes
Cook Time: 15 minutes
Serves: 18 using a 2 inch scoop
Ingredients:
2 1/4 C. all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. powdered ginger
2 stick of butter, softened
3/4 C. packed brown sugar
1/4 C. white sugar
2 eggs
1 tsp. vanilla extract
2-3 tsp. maple extract or 1/4 C. maple syrup, I like it with more of a maple flavore so I use 3 tsp.
1 C. chopped walnuts, optional
Sugar topping:
1/2 C. Sugar
2 tsp. cinnamon
What to do:
Preheat oven to 350 degrees.
Combine sugar and cinnamon topping in a small bowl, set this aside.
Combine flour, baking soda, salt, cinnamon, nutmeg and ginger, set aside.
In a large bowl, mix together the butter, sugars, eggs, vanilla and maple extract. Beat with a hand mixer or your stand mixer, on medium speed until creamy and combined.
Gradually add in the flour the mixture. Beating on low speed until just combined. Stir in nuts (if using).
Using a 2 inch scoop or whatever you have on hand , scoop dough and place in sugar topping. Swirl around so ball gets covered in the deliciousness (sugar). Then place on greased baking sheet about 2 inches apart. (These cookies don’t spread very much.
Bake for 10-12 minutes, or just until the edges start to brown. They will look like they are not done, but they are. Be careful not to overcook.
Remove from the oven and let the cookies cool on a wire rack.
