Thumbing through Facebook, I came access Krista Moser’s picture of her moms assorted Christmas cookies. I couldn’t help to ask for this particular recipe. This brings back so many wonderful memories at my grandparents house around the holidays. Thanks for the recipe, it didn’t disappoint! This one will be on my cookie line up from now on!
Prep time: 5 minutes
Bake time: 20 minutes
Yields 4 dozen
Ingredients:
1 C. Butter or margarine, softened
1/2 C. White sugar
1/2 c. Light corn syrup
2 eggs, separated
2 ½ C. All-purpose flour
2 C. Finely chopped walnuts or pecans
Candied cherries, halved
What to do:
Cream butter in a large mixing bowl: gradually add sugar, beating until it’s light and fluffy. Add syrup, egg yolks and flour; mix well. Chill for 15 to 30 minutes.
Shape dough into one inch balls; dip each ball into lightly beaten egg whites then into the nuts. Gently press a cherry half cut side down, into the center of each. Place 1 ½ inches apart on greased cookie sheet. Bake at 325 degrees for 20 minutes. Once done, remove from the cookie sheet, and then move to wire rack to cool.
