If you love French Onion Soup then you’ll love this dish. Smothered in all kinds of goodness. This is a warm, comforting chicken dish that will be sure to please your people. It’s what you want in comfort food — flavorful and filling.
Buttery French Onion Chicken Skillet
Prep time: 5 minutes
Cook time: 25 minutes
Serves: 4-6
Ingredients:
2 T. Butter
2 T. Olive oil
3 large chicken breasts cut in half or lengthwise you can also use bone in or boneless chicken thighs
2 large sweet onions, sliced
2 tsp. Garlic
3 C. Beef broth
2 T. Corn starch mixed with 2 T. Water, set aside
4 slices of cheese or 1 C. Shredded (provolone, Swiss, mozzarella, or whichever your family likes the most.)
What to do:
Heat oil and butter in a large skillet over medium heat. Add onions, garlic, salt and pepper to taste. Stirring occasionally cook for 10 to 15 minutes or until softened and caramelized. Place chicken on top of onions and pour broth over chicken, cover and cook for 20-25 minutes or until chicken is done. Move chicken over to the edge of the skillet or on a separate plate, then pour the cornstarch mixture in the center, stir and cook until desired thickness is reached. Place chicken back in skillet, if you used a separate plate. Place cheese on top of chicken and cover with lid to let the cheese melt, or you can place the skillet under a broil to get the cheese nice, gooey, and golden brown on top. Serve over rice, mashed potatoes, noodles, mashed cauliflower, or riced cauliflower. Garnish with parsley.
