I’m OBSESSED with these Cherry and Goat Cheese Crostini Appetizers! I’m convinced you will be too! It’s a fun, fresh, and easy snack or appetizer to throw together. The sweet cherries, dreamy goat cheese and fresh herbs gives it that perfect combination of sweet and savory.

Cook Time: 10 minutes
Serves: About 18 to 20 depending on how big the baguette is.
Ingredients:
1 baguette
Olive oil
Salt and pepper
1 lb. Dark sweet frozen cherries
1 tsp. Minced or prepared garlic
1 T. Orange juice
1 T. Honey
1 tsp. Balsamic vinegar
2 tsp. Chopped fresh thyme or 1 tsp. dried, divided
2 tsp. Chopped fresh rosemary or 1 tsp. dried, divided
8 oz. Creamy goat cheese or goat cheese crumbles
1/2 C. Chopped walnuts
What to do:
Preheat oven to 350 degrees.
Cut your bread into about ½ inch slices, I cut mine on a diagonal.
On a cookie sheet place your bread and brush with olive oil then dash with salt and pepper.
Bake until golden brown and crisp, about 7 to 10 minutes.
In a medium saucepan over medium heat add in cherries, garlic, orange juice, honey, vinegar, 1 tsp. of thyme and 1 tsp. of rosemary. Cook until consistency resembles cranberry sauce, 6 to 8 minutes.
Remove from heat and cool.
Next it’s time to layer the bread:
Spread goat cheese
Top with a spoonful of cherry mixture
Top with walnuts, thyme and rosemary
