Love mushrooms…..meet your new favorite side dish. Easy peasy mushroom and rice made in one pot! It’s so easy, creamy and packed full of that rich earthy mushroom flavor! You might just want this as your main dish.
Prep Time: 10 minutes
Cook Time: 20-30 minutes
Serves: 4-6 as a side dish
Ingredients:
2 T. Oil
4 T. Butter
24 oz. mushrooms, sliced, the type is up to you
1 small onion, chopped
1 Tsp. dried thyme
1 T. minced garlic, prepared or 4 cloves
1 C. long grain rice
2 C. beef broth, more if needed
1/2 C. chopped green onion or chives, extra for garnish
Salt and pepper to taste
What to do:
Heat 2 T. of oil and 2 T. of butter in a large skillet over high heat. Add your sliced mushrooms, salt and pepper to taste, cook until golden brown about 10 minutes. I like mine more on the caramelized side. Remove mushrooms. Turn heat to medium then add the rest of your butter, onions and thyme in the skillet. Cook for about 5 minutes or until translucent. Add in your garlic and rice sauteing for 30 seconds, constantly stirring.
Add in your beef broth and mushrooms, giving it a good stir while scraping the bottom to pick up any of those delicious caramelized bits. Bring to a boil , cover and turn the heat on low. Cook for 20 minutes or until the rice is done. Adding more broth if the rice absorbs it. Once rice is done fluff with a fork and garnish with more green onions or chives.
