This simple potato soup is ultra creamy and comforting! It’s quick and easy to make on the stovetop and it’s always so cozy, comforting and delicious.

Serves: 6-8
Ingredients:
1 ham stake (about 2 C.) chopped into bite size pieces
1 C. onion, chopped
1/4- 1/2 C. celery, chopped
1 C. carrots, chopped
2 cloves garlic, minced
6 C. potatoes, cubed (fresh or frozen, if frozen a 32 oz. bag will do the trick)
1 tsp. salt
1 tsp. black pepper
5 C. chicken broth
1 C. heavy cream or milk
1/2 C. flour
2 C. processed cheese or shredded cheddar cheese
What to do:
In a large stock pot add ham, onion, celery, carrots, garlic, potatoes, salt and pepper. Cook on medium heat for 5 minutes or until vegetables are tender. Add chicken broth and cook vegetables until cooked through. In a small bowl combine cream or milk with flour, mix until smooth. Pour into soup, stirring to combine, continue to cook until thick. Add extra water or broth if soup is to thick. Take off the stove and add in cheese, continue to stir until all cheese is melted. Garnish with extra cooked ham, bacon and green onion.
