This recipe has been passed down for generations, and I can definitely see why! It’s a keeper, and I’ll definitely be making it again when my garden is producing fresh zucchinis. I love this cake so much!

Cook time: 40 to 45 minutes
Serves: 12 to 16 depending on slice size
Ingredients:
1/2 c. Butter
1/2 c. Oil
1 3/4 c. Sugar
2 eggs
1 tsp. Vanilla extract
1/2 c. Buttermilk
2 1/2 c. Flour
1/4 c. Cocoa
1/2 tsp. Baking powder
1 tsp. Baking soda
1 tsp. Salt
2 c. Grated zucchini
1/2 c. Chocolate chips
1/2 c. Brown sugar
What to do:
Preheat oven to 350 degrees.
Spry a 9×13 with cooking spray.
Combine your butter, oil, sugar, eggs, and vanilla extract. Mix in your dry ingredients and milk, making sure all is incorporated. Last but not least stir in your grated zucchini. Sprinkle your chocolate chips and brown sugar on top. Bake 40 to 45 minutes or until a toothpick inserted into cake comes out clean. Serve with a side of ice cream and chocolate sauce.
