Ingredients:
1 lb. Italian sausage
1 medium onion, chopped
3 cloves garlic, minced or 1 ½ tsp. prepared
4 C. chicken broth
Salt and pepper to taste
1 tsp. Italian seasoning
1 (16 oz.) potato gnocchi
1 small pkg. frozen mixed vegetables
1 C. heavy cream
What to do:
In a large stock pot, cook and crumble Italian sausage over medium heat for 6 to 9 minutes or until sausage is no longer pink. Add onion and garlic; continue cooking 1 to 2 minutes or until onions are tender. Add broth, salt, pepper, and Italian seasoning to the pot, heat to boiling then add in gnocchi and vegetables. Simmer until gnocchi begins to float, usually about 2 to 3 minutes. Stir in whipping cream; garnish with cheddar cheese and parsley, serve warm.
