Every bite of this loaded Buffalo Chicken Cauliflower casserole is packed with flavor from that spicy buffalo sauce. I was inspired to make this simple recipe by my love affair for any and all things made with Buffalo sauce.
Prep time: 10 minutes
Cook time: 30 – 45 minutes
Serves: 8
Ingredients:
1 large head of cauliflower, about 18 oz. or so, cut into bit size pieces
8 oz. Cream Cheese, softened
1/2 C. Louisiana hot sauce, the brand is up to you
1 tsp. garlic powder
1/2 C. Sour cream
8 oz. or about 2 C. of shredded Cheddar cheese
1 lb. chicken, cooked and diced, rotisserie chicken works great here.
1 C. chopped celery
1 chopped jalapeno about 4 T.
What to do:
Preheat oven to 350 degrees F.
Remove the core from your cauliflower head and cut into bite-size pieces.
In a large bowl stir together cream cheese, hot sauce, sour cream, cheddar cheese, chicken, celery, and jalapenos. Next, add the cauliflower, and toss until well coated.
Pour into a 9×13 inch casserole dish,
bake for 30- 45 minutes or until the cauliflower is cooked through and the cheese is melted, golden brown, and bubbly. Once done let set for 10 minutes to set up. Garnish with jalapeno, cheddar cheese, chopped celery or for those blue cheese lovers….blue cheese chunks!
