I love this dish, it is so versatile, it can be a main course, a side dish or even an awesome dip. It’s a quick recipe (under 20 minutes) and takes very few ingredients. You probably already have all the ingredients in your pantry. This one won’t disappoint!!

Cook time: 15 minutes
Serves: 4
Ingredients:
1 lb. Chicken breast, cut into bit size pieces
2 T. Taco seasoning
1 tsp. Onion powder
2 tsp. Minced garlic
Salt and pepper to taste
1 (10 0z.) Can diced tomatoes with green chilies
4 oz. Cream cheese, softened
3/4 C. Chicken broth
1 C. Cheddar cheese, or any cheese you like the most
What to do:
In a large skillet over medium heat cook your chicken until no longer pink. Add your taco seasoning, onion powder, minced garlic, salt and pepper to taste, and diced tomatoes, mix well until combined. Next, mix in your softened cream cheese. Once that is mixed in add your cheddar cheese. Take off heat and stir until everything is melted and heated through. Serve this over rice, mashed potatoes or noodles. Garnish with sour cream, parsley, and/or jalapenos just to name a few! Enjoy!!!
