This isn’t exactly the classic pot roast that you grew up with, but I promise its still a comfort food at it’s best. The beef is fall apart tender and makes it’s own gravy as it cooks.
Prep time: 10 minutes
Cook time: low for 8 hours
Serves: 6 about ½ lb. of meat each
Ingredients:
3 lb. Roast, type of roast is up to you
Salt and pepper
2-3 T. Olive oil
1 1/2 C. Beef broth
2 tsp. Minced garlic
1 pkg. brown gravy
1 pkg. Italian salad dressing mix
Parsley for garnish
What to do:
Salt and pepper your roast.
In a large skillet over medium high heat add the olive oil, when hot add in your roast and caramelize on all sides, unless you can brown in your slow cooker. Once your meat is browned on all sides place in your slower cooker. Add your beef broth to your pan to deglaze it, making sure to get all those bits and pieces loose, those are great flavor. Next turn off stove, add in garlic, gravy packet, Italian dressing packet, salt and pepper if needed then pour over roast. Cook for about 8 hours or until the meat falls apart on low and turn roast half way through.
Once done, shred or slice, garnish with parsley and serve with mashed potatoes, rice, cauliflower rice, side salad or on a bun!
