This easy cauliflower mash recipe is super tasty, creamy, low carb, and easy to make. It’s great to serve for weeknight dinners, holiday gatherings or any occasion that comes up.
Prep time: 5 minutes
Cook time: 10 to 30 minutes
Serves: 4
Ingredients:
20 oz. or so (2 ½ C.) of frozen riced cauliflower
1 T. Minced garlic, prepared is fine
1 tsp. Salt
Pepper to taste
1/4 C. Heavy cream
6 T. Butter
3/4 C. Sour cream
1 tsp. Onion powder
1/2 C. Cheddar cheese or a cheese you desire the most
Garnishes: melted butter, chives, parsley, herbs to name a few
What to do:
Place cauliflower in microwave safe dish, cover and cook until very tender. (Microwave times will very depending on your wattage). Place all ingredients in a blender or food processor. Process until smooth, adjust salt and pepper to taste. You can be done here, just serve in a bowl and top with chives, parsley and melted butter or…..you can take it up a notch! Scoop into a baking dish and top with your cheese. Bake at 400 degrees for 20 to 30 minutes or until bubbly, hot and golden brown.
Christina’s notes:
If you prefer a stiff consistency, put your cauliflower in a clean dish towel after you have microwaved it and wring it out. Try to take as much moisture out as possible, then continue with recipe.
