Zucchini with ranch dressing mix, butter, parmesan cheese and parsley, makes for a flavorful and tasty side dish. It’s one of my favorite zucchini recipes that’s quick and easy. This method lets the zucchini be the star of the show.
Prep time: 5 minutes
Cook time: 4 to 6 minutes
Serves: 4-6
Ingredients:
3 lbs. Zucchini sliced, about 6 small
2 T. Butter
1 packet of ranch saled dressing seasoning mix
Salt and pepper to taste
2 T. Parmesan
1/2 tsp. Red pepper flakes
Parsley for garnish
What to do:
Heat the butter in a large sauté pan (cast iron works best) on medium heat. Add the zucchini slices and cook them for 4-6 minutes, caramelizing some if you wish. Meaning, let the bottoms get nice and crispy before stirring and crisping up the other side.
Once that is done, sprinkle on your salad dressing seasoning, then flip your zucchini and sprinkle more, flip again and sprinkle more, this way you get all that goodness to coat each or most of the zucchini. Top off with your red pepper flakes, parmesan and parsley! Salt and pepper if you wish…Boom…that is it…simple and delicious!
