Throwback to an old fashioned favorite. This recipe for Berry Ambrosia Salad is about as quick and easy as they come. Take to any picnic, bbq, family get together, not to mention it’s kid friendly!

Serves: 5 to 7
Ingredients:
1 pint heavy cream
1/4 C. confectioners’ sugar
2 cups sour cream
1 1/2 cups flaked coconut, sweetened or unsweetened
1 (20 ounce) can crushed pineapple, drained
1 pint fresh red berries, pick one type or do a mixture of berries. Like strawberries, hulled and sliced, red raspberries, cherries etc.
1 pint fresh blue or black berries, pick one type or do a mixture of berries. Like blueberries, blackberries, huckleberry etc.
3 cups miniature marshmallows
What to do:
Using an electric mixer or stand mixer combine the heavy cream and confectioners’ sugar in a large bowl; whip until thick and glorious. Next add in the sour cream and combine well. With a rubber spatula carefully fold in the flaked coconut, pineapple, berries and marshmallows. Making sure everything is coated well and combined well. Cover and let chill in the fridge for a minimum of 4 hours, but to be honest over night is the best.
