This dish is a delicious Mexican-American comfort food. My Mexican Meatloaf is a twist on the classic meatloaf recipe. It’s a very versatile recipe as you can add or subtract ingredients you like or don’t like.

Cook time: 40 minutes
Serves: 4-6
Ingredients:
1 lb. Ground beef
1 lb. Bulk sausage
2 eggs
1 medium onion, chopped
2 tsp. Minced garlic
4 oz. Green chilies, chopped
1 pkg. Taco seasoning
1/2 C. Shredded cheese, taco blend or whatever verity your family enjoys
1/2 C. Salsa
What to do:
Preheat oven to 350 degrees.
In a large mixing bowl combine all the ingredients except the cheese and salsa. Press the meat mixture into a loaf pan. I think the loaf pan works best for this type of meatloaf, because the sides don’t let the cheese and salsa ooze all over. Top with cheese and salsa. Bake for 40 to 50 minutes, let cool for 10 minutes before slicing.
