Oven roasted cabbage is an easy recipe that you are sure to enjoy time and time again. The cabbage, bacon and onion gets those crisp caramelized edges that taste amazing and takes the dish to another level!
Prep time: 5 minutes
Cook time: 45 minutes – 1 hour
Serves: 4-6
Ingredients:
1 head cabbage, chopped
3 to 4 medium potatoes, chopped
1/2 to 1 lb. Bacon, cut into bite size pieces
1 large onion, chopped
Garlic powder
Onion powder
Salt and pepper to taste
More herbs if you wish
What to do:
Preheat oven to 400 degrees
Line a large cooking vessel (I use a cookie or jelly roll pan) with foil. Spread your cabbage then chopped potatoes on top. Sprinkle with garlic powder, onion powder, salt and pepper to taste.
In a medium fry pan over medium high heat cook your bacon until about half done then add your onions. This is done when desired crispness has been reached. (I like mine a little caramelized). Spread this on top of your cabbage and potatoes, I also use the bacon grease but that’s optional. Instead of the bacon grease you could use butter for extra flavor and moisture. Put another piece of foil on top creating a pouch. Bake at 400 degrees for about 45 minutes to 1 hour. More or less depending how crisp or tender you like your cabbage.

The last 10-15 minutes take the foil off and roast to let the vegetables get crispy.
