Easy Beef Enchilada Casserole… packed with layers of beef, enchilada sauce, tortillas, cheese and all sorts of goodness! It comes together quicker than traditional enchiladas. It’s comfort food that your whole family will love.

Ingredients:
1 lb. Ground beef, chicken or Turkey
1 small onion, chopped
1 (15 oz.) Can refried beans
1 (10 oz. Or so) can of red enchilada sauce
12 corn or flour tortillas (6 inches)
4 oz. Of green chilies
1 (15 oz.) Can black beans, rinsed and drained
1 (15 oz. ) can of corn, drained
2 tsp. Minced garlic
1/2 tsp. Oregano
1 tsp. Cumin
1 can of diced tomatoes with green chilies ( regular or fire roasted, if you don’t Like spicy)
3 C. Of shredded cheese, cheddar, Colby jack, taco mix…etc.
What to do:
Preheat your oven to 350 degrees. Spray a 9 by 13 inch baking dish with cooking spray and pour 1/3 cup of the enchilada sauce in the bottom of the prepared dish and set aside.
In a medium size pot cook your ground beef and onion until you see no pink. Once the beef is cooked through, remove from the heat, drain the fat and stir in the refried beans, set aside.
In a large bowl mix the green chilies, black beans, corn, garlic, oregano, cumin, diced tomatoes and the rest of the enchilada sauce.
Line the bottom of the casserole dish with 6 of your tortillas. Next, layer half of your meat mixture, then half of the vegetable mixture and 1 cup of cheese on top of that. Repeat for one more layer.
Bake uncovered for 35 to 45 minutes or until the cheese is bubbly and golden brown.
