A great nostalgic recipe to add to the recipe book and a perfect holiday treat! These cookies will melt in your mouth and tantalize your sweet tooth!
Prep time: 15 minutes
Cook time: 90 minutes plus rest time in oven or
6 hours in a dehydrator
Ingredients:
4 egg whites, room temperature
1 T. White vinegar
1 T. Corn starch
1 C. Granulated white sugar
3 T. Strawberry Jell-O gelatin powder, or any flavor you desire
8 oz. Dark chocolate melting wafers or chocolate chips, melted
What to do:
Oven process:
Preheat oven to 200°F. Line two baking sheets with parchment paper. Set aside.
In a clean, dry mixing bowl, (plastic is not recommended as it can retain residual grease) whisk egg whites with electric mixer until foamy (about 30 seconds).
Add in vinegar and corn starch and continue to beat for about a minute, as soft peaks begin to form.
Slowly add in sugar while mixer is on high, and continue beating while adding in gelatin powder. Beat until stiff peaks form (about 4 minutes).
Fill pastry bag or gallon size plastic bag with meringue and pipe onto the parchment paper in swirls (using your favorite tip) at least 1 inch apart, these cookies don’t spread much. Place in oven and bake for 90 minutes. Turn oven off and leave in oven for several hours until dry.
Once cooked and cooled, dip bottoms in melted chocolate. Allow to set until chocolate has hardened.
Meringue cookies can be stored for 2 weeks in an airtight container at room temperature or longer if they’re in the freezer.
Dehydrator processes:
Set the dehydrator to 160.
Line your trays with parchment paper. Follow the recipe above for the making of the cookies and also piping. Place cookies in dehydrator for about 6 hours or until light and crisp.

Christina’s notes:
Make sure to bring egg whites to room temperature. Also be sure not to get any egg yolks in the egg whites. Any amount of fats can prevent the egg whites from whipping to stiff peaks.
Also, remember every oven is different. Some may brown more in the back , front etc. Place your cookies accordingly.
