Ranch Roast is an amazingly scrumptious hearty melt-in-your-mouth tender crockpot meal! Your crockpot and smoker does all the work, and you get all the credit!

Cook time: 8 hours, depending on crockpot
Serves: 4
Ingredients:
1 (3-5 pounds) roast, type is up to you. Most will work with this recipe.
1 large onion sliced
2 T. Minced garlic
1 can (10 ½ oz.) Beef consommé
1 package dry ranch dressing mix
1 jar (12 oz. or so) pepperoncini peppers or banana peppers, sliced or whole, drained
1/2 cup (1 stick) butter
2 tablespoons fresh parsley chopped (optional)
What to do:
In a foil pan place your sliced onions and garlic. Then place your roast on top, pour your beef consommé over your roast. Smoke your roast for 4 hours, smoke only no temperature. Your flavor of wood is up to you.
Once 4 hours of smoking is up place the roast and all its contents in a crockpot.
Sprinkle the dry ranch mix evenly over the roast. Top with pepperoncini or banana peppers and stick of butter. Cover.
Cook on low for 8 hours or on high for 4 hours or until roast is fork-tender and falling apart. At this point you can shred the meat or leave whole. Move meat and peppers to a bowl or platter. Combine all the cooking liquids together and spoon over the meat. Sprinkle meat with chopped parsley or sliced green onions and serve.
